Locavore NXT’s low-slung campus places the garden, fermentation work, and kitchen in one frame. Hujan Locale occupies a handsome old Ubud townhouse and looks across the Indonesian archipelago rather than narrowing dinner to Bali alone. The cooking is generous and best approached family-style, with bright sambals, charred meats, coconut-rich curries, and herbs cutting through the richer plates.

Order: Share the grilled pork, a fish or shellfish dish, one vegetable plate, and rice; ask the kitchen to sequence dishes from fresh and acidic to smoky and slow-cooked.

Sandikala’s open-sided room looks across the main pool toward the sea, a fitting first dinner in East Bali. The kitchen draws from the resort garden and nearby waters, with Indonesian dishes presented cleanly but without sanding away their spice or texture.

Order: Ask for a compact Indonesian menu centered on the catch of the day, local greens, sambal matah, and rice; finish with seasonal fruit rather than a second elaborate dessert.

The evening moves into the private grounds of Ujung Water Palace for a guided walk and dinner developed with the Karangasem royal household. Courses draw on East Balinese traditions while the long pools, bridges, and mountain backdrop shift from late light to candlelight.

Experience: Accept the regional set menu and ask that spice levels remain traditional. A non-alcoholic pairing of local botanicals, tea, and fruit is the most coherent accompaniment after the morning at sea.

Sangkar sits at the cliff’s high point, its terrace open to the Indian Ocean and its room shaped by sculptural Balinese birdcages. After the cross-island drive, the all-day format makes for an easy, flexible dinner grounded in Indonesian flavors.

Order: Start with a raw or lightly cured seafood dish, then share grilled fish, Balinese vegetables, and rice. Keep the meal à la carte and finish early.

Il Ristorante brings Niko Romito’s precise, pared-back Italian cooking to Bali, with chef de cuisine Francesca Stabile incorporating local ingredients into dishes developed for the island. The room is polished and quiet, making this the journey’s final formal dinner rather than another excursion into traffic.

Experience: Choose the tasting menu and let the sommelier build a restrained by-the-glass progression. Flag any dietary requests at least 48 hours in advance; the last order is at 9:00 p.m.

A late supper is set in the villa garden after the Kecak performance, lit softly and served without ceremony. This is intentionally lighter than the previous night’s tasting menu and avoids turning the final evening into another restaurant transfer.

Order: Clear chicken or vegetable broth, grilled local fish, steamed greens, rice, and sliced tropical fruit; keep alcohol optional and minimal.
